Who am I?

I am Alfredo Tonetti, born in a small town called Nilo Peçanha in the state of Bahia, located in the northeast of Brazil. I grew up in a small farming community where cassava is the main economic activity. I witnessed every step of the cassava process, from planting to the making of flour and other derivatives.

As a culinary enthusiast, I started cooking at the age of 12, learning from simple people different ways to prepare dishes using various types of cassava.

I arrived in the United States on July 4, 1988, in the city of Roanoke and fell in love with it, never wanting to leave.

Now, as a retired Chef, I want to share with you the delights of Bahia State’s cuisine.
